Our Story
Rooted in tradition and guided by tide, our family-owned and operated oyster farm proudly works the original oyster beds of Coos Bay. For generations, these rich coastal waters have shaped not only exceptional oysters, but also our way of life.
What began as a small family venture has grown into a dedicated craft built on respect for the land, the sea, and our community. Every oyster we harvest is nurtured in the cold, clean Pacific waters that make Coos Bay one of the most renowned shellfish-growing regions in the Pacific Northwest. The unique mix of saltwater and freshwater creates the perfect environment for oysters with a crisp brine, smooth finish, and a true taste of Oregon’s coast.
As stewards of these historic beds, we are committed to sustainable aquaculture practices that protect the bay for future generations. From careful seed selection to hand-harvesting at peak condition, our family is involved in every step of the process. We believe that great oysters come from patience, hard work, and a deep respect for nature.
When you enjoy our oysters, you’re not just tasting premium shellfish — you’re experiencing a piece of Coos Bay’s living history, cultivated with pride by a family who calls this shoreline home.

Our mission at Augustin Oyster Farms is to sustainably grow exceptional oysters in the pristine waters of Charleston, Oregon while honoring the traditions of family farming. We are committed to protecting the health of our coastal ecosystem, supporting our local community, and providing fresh, high-quality shellfish from our family to your table.

Located in the coastal community of Charleston, Oregon along the waters of Coos Bay, our family-owned oyster farm is rooted in a deep respect for the ocean and the traditions of Oregon’s working waterfront. We cultivate our oysters in the clean, nutrient-rich estuaries of South Slough, where the meeting of fresh and saltwater creates the perfect environment for growing exceptional shellfish.
Our farm focuses on small-scale, sustainable aquaculture and careful stewardship of the estuary. Every oyster we harvest is planted, selected and harvested by hand, allowing us to maintain quality while minimizing our impact on the surrounding ecosystem. This hands-on approach reflects our belief that great oysters come from healthy waters, patience, and hard work.
By working closely with the natural rhythms of the tides and seasons, we raise oysters that capture the unique character of Oregon’s South Coast—clean, briny, and full of flavor. As a family operation, we take pride in providing fresh, responsibly grown oysters while helping preserve the waters and coastal traditions that sustain our community.
From our farm to your table, our goal is simple: honest shellfish grown with care in the waters we call home.

Our farm proudly grows premium Pacific oyster in the cold, nutrient-rich waters surrounding Charleston, Oregon along Coos Bay. The unique mix of ocean tides and fresh water flowing through nearby estuaries creates ideal conditions for producing oysters with a clean, briny flavor and a crisp finish that reflects the character of Oregon’s South Coast.
We offer our oysters in a range of sizes to suit every table and style of preparation. From petite oysters, perfect for raw bars and delicate half-shell presentations, to extra-large oysters ideal for grilling, roasting, or hearty coastal recipes, each oyster is grown slowly and carefully to develop exceptional flavor and texture.
Our oysters are cultivated with attention to quality at every stage of growth. By allowing them to mature naturally in the estuary and harvesting them at the right time, we provide a consistent selection of sizes that chefs, seafood markets, and oyster lovers can rely on.
Whether served fresh on the half shell or cooked over an open flame, our oysters deliver the taste of the Pacific Northwest—fresh, bold, and shaped by the waters of Coos Bay.

Because oysters are grown in open coastal waters, harvesting is carefully regulated to protect public health and ensure the highest quality shellfish. In the growing areas around Charleston, Oregon and Coos Bay—including the estuaries of South Slough—heavy rainfall can temporarily trigger what are known as rain closures.
After significant rain events, runoff from surrounding land can carry natural bacteria, sediments, and other contaminants into coastal waters. Because oysters such as the Pacific oyster are filter feeders, they naturally filter large amounts of water as they grow. During periods of heavy runoff, this process can cause oysters to temporarily accumulate bacteria from the water.
To ensure oysters remain safe and high quality for consumers, state shellfish regulations require harvest areas to close for a period of time after major rainfall. During a closure, we are not allowed to harvest oysters until water quality tests confirm that conditions have returned to safe levels.
While closures can occasionally pause harvesting, they are an important part of maintaining a safe and sustainable shellfish industry. These protections help ensure that every oyster harvested from our farm meets strict food safety standards and reflects the clean, healthy waters of Oregon’s coast.
We appreciate your understanding when rain closures occur. These temporary pauses help protect both the environment and the quality of the oysters we are proud to grow and share.
